A certified food service manager must be present in all establishments at which potentially hazardous food is prepared or served. The kitchen staff is cooking and preparing meats and sushi items and the certified manager did not arrive in the restaurant until 45 minutes had passed.
All necessary control measures shall be used to effectively minimize or eliminate the presence of rodents, roaches, and other vermin and insects on the premises of all food establishments. Over 25 small flies were found in the basement linen area and dirty dish area at this time. Remove all evidence of pest activity and clean up all areas of possible harborage.
