All employees who handle food shall wash their hands as often as necessary to maintain a high degree of personal cleanliness and should conform to hygienic practices prescribed by the Board of Health. Observed a foodhandler at front serving line, eating & drinking then serves a customer without washing hands & changing gloves. Observed another foodhandler in rear prep area emptying garbage bins with gloved hands then going back to prep-table without washing hands also. Must properly wash hands for every change in task, before donning gloves on.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. Cutting boards with deep/dark grooves must be sanded/bleached to make smooth/easily cleanable.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. The frozen beverage machine at bar must have the waste-waterline drain into an open/floor drain.
The walls and ceilings shall be in good repair and easily cleaned. Dusty ceiling vents in rear prep area & filters at hood of cooking equipment must be kept clean.
A certified food service manager must be present in all establishments at which potentially hazardous food is prepared or served. Must have on premises a City of Chgo Sanitation certificate holder, while P.H.F is prepared, handled, served.

WASH, RINSE AND SANITIZE ALL OF THE FOOD DISPENSING UTENSILS AND EQUIPMENT UNTIL IT IS CLEAN, SANITARY AND MAINTAINED ON A DAILY BASIS.
