Exposed handsink in ice cream area not working. Instructed to repair sink with hot and cold running water or remove. Premieses does have additional hand sink that is near the ice cream bar.
Outside garbage waste grease area not maintained or cleaned. Observed waste grease and encrusted grease on exterior of grease box. Also, observed waste grease on ground around grease box. Instructed manager that the grease box exterior and the ground must be kept cleaned, dry and maintained to prevent any pest activity. Serious citation issued 7-30-020.
Potentially hazardous foods doesn't meet temperature requirements during storage preparation, display and service. Found the following potentially hazardous foods stored in the cooler stated above: Tarter sauce 1 gal at 45.3F, Caesar dressing 1 gal at 46.2F, Feta cheese 5 gal at 50.0F, Mozzarella cheese 2 qrts at 44.4F. Instructed that all potentially hazardous foods must maintain 40F or below during storage. Manager discarded all products value $80.00, 8 gallons. Critical citation issued 7-38-050A.
