All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. MUST RE-SEAL ANY WOODEN WALL AT BAR AREA, & BARE WOODEN DOORS IN BASEMENT STORAGE ROOMS- TO MAKE SURFACES SMOOTH/EASILY CLEANABLE. MUST RE-CAULK AROUND COFFEE STATION SINK.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. INTERIOR FLOORS OF BAR COOLERS & SINKS AT 1ST FLOOR & BASEMENT MUST BE KEPT CLEAN. MUST ALSO CLEAN FAN GUARDS OF MOST COOLERS.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. MUST FIX LEAKY PIPE UNDER SPRAYER SINK AT DISHMACHINE.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. ANY MILK/SODA CRATES USED FOR STORAGE RACKS MUST BE REPLACED WITH REGULAR SHELVINGS, FOR EASY ACCESS TO CLEANING/PEST MONITORING.

REPAIR THE BROKEN EMPLOYEE BATHROOM FAN.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. THE WALK IN COOLER FLOOR IS DIRTY UNDER THE RACK FEET, CLEAN AND REMOVE DIRTY CARDBOARD 'SHIM'.

THE ICE MACHINE HAS A DIRTY/RUSTY BUILDUP AROUND THE INTERIOR AND BIN CHUTES. THE BAR 3-COMPARTMENT AND HAND SINK IN THE FIRST FLOOR ARE STAINED. WASH, RINSE, SANITIZE AND REPAIR THE ABOVE ITEMS SO THEY ARE SMOOTH, SANITARY AND EASY TO MAINTAIN.
STORE WIPING CLOTHS IN SANITIZING SOLUTION IN BETWEEN USE.
THE CLEAN KITCHEN TOWELS ARE STORED UNPROTECTED IN A DIRTY STOREROOM. Soiled and clean linens, coats, and aprons shall be properly stored.
