All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair.PROVIDE A SELF DRAIN CONTAINER TO STORE ICE USED FOR HUMAN CONSUMPTION

Equipment and utensils should get proper exposure to the sanitizing solution during the rinse cycle. Bactericidal treatment shall consist of exposure of all dish and utensil surfaces to a rinse of clean water at a temperature of not less than 180F. OBSERVED EMPLOYEE WASHING DISHES AT THREE COMPARTMENT SINK WITHOUT SINK BEING SET PROPERLY TO WASH, RINSE AND SANITIZE. NO CHLORINE ON PREMISES TO SANITIZE DISHES AND EQUIPMENT. MANAGEMENT PURCHASED BLEACH AT STORE DURING INSPECTION AND THEN I DEMONSTRATED THE PROPER METHOD TO SET SINK TO PROPERLY WASH, RINSE AND SANITIZE.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. MUST NOT USE CARDBOARD AS LINER FOR SHELVING. SHELVING THROUGHOUT REAR PREP ABOVE METAL PREP TABLE DIRTY WITH DUST AND FOOD STAINS. MUST CLEAN AND MAINTAIN.
Containers and utensils shall be inverted, covered, or otherwise protected from contamination until used. All single-service drinking straws and containers shall be discarded immediately after use. DIRTY UTENSILS BEING STORED HANGING ABOVE REAR PREP TABLE. MUST CLEAN AFTER EACH USE BEFORE STORING.
All food not stored in the original container shall be stored in properly labeled containers. ALL PREPARED FOODS MUST BE LABELED AND DATED.

MUST DETAIL CLEAN GREASE BUILD-UP ON WALL BEHIND DEEPFRYER IN KITCHEN PREP AREA. DETAIL CLEAN WALLS REMOVE DIRT, DEBRIS AND DUST IN PREP AREA.
