The walls and ceilings shall be in good repair and easily cleaned. DETAIL CLEAN WALLS IN KITCHEN TO REMOVE GRIME. SEAL/PAINT WALL ACROSS FROM EMPOYEES WASHROOMS. SEAL HOLES IN CEILING ABOVE HOT WATER TANK. REPAIR CAULKING RIGHT SIDE OF 3 COMPARTMENT SINK AND SMOOTH CAULKING NEAR FLOOR THROUGHOUT KITCHEN. INADEQUATE SHELVING FOR WALK IN COOLER. MUST PROVIDE.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. REMOVE ALL DEBRIS FROM DUMPSTER AREA OUTSIDE.

OBSERVED ONE OF THE EMPLOYEE PREPARING BREAD,WENT TO THE EXPOSED HAND SINK,TOOK SOME PAPER TOWEL AND WIPE HIS HANDS WITHOUT WASHING HIS HANDS WITH WATER AND SOAP AND WENT BACK TO PREPARE THE DOUGH FOR BREAD. ONE OF THE LADY WHO WAS PREPARING THE DOUGH FOR BREAD DID NOT WANT HER HANDS ALSO. INSTRUCTED EMPLOYEES HOW TO PROPERLY WASH THEIR HANDS WITH SOAP AND WATER FOR 20 SECONDS BEFORE AND AFTER PREPARING FOODS. PROPER HANDWASHING SIGN WAS POSTED BY THE HAND SINK.CITATION ISSUED CRITICAL.
FOUND OUTSIDE GREASE CONTAINER NOT MAINTAINED WITH GREASE DRIPPING AROUND THE RIM AND ON TOP OF THE LID. ALSO SURROUNDING AREA AND THE GROUND BY THE GREASE CONTAINER WITH DEBRIS. INSTRUCTED TO CLEAN IN DETAIL AND MAINTAINED. OWNER ASKED ONE OF THE EMPLOYEE TO CLEAN THE OUTSIDE GREASE CONTAINER AND SURROUNDING AREA WHILE I WAS TYPING THE REPORT CITATION ISSUED SERIOUS.

INSTRUCTED MANAGER TO HAVE TECHNICIAN REPAIR THE DISH MACHINE TO READ FINAL RINSE SANITIZER LEVEL AT 100PPM. CITATION ISSUED CRITICAL, 7-38-030. TECHNICIAN FROM ECOLAB CAME AND WAS ABLE TO FIX THE DISH MACHINE AND NOW THE FINAL RINSE READING SANITIZER LEVEL AT 100PPM.

Violation #29 not corrected from report #679258 dated 3/26/12 at the time of inspection. Manager and his employee started cleaning the walls of the 3 compartmnet and 2 compartment sink and started re caulking along the splashguard of the 3 compartment sink and 2 compartment sink in front of me. Manager threw out the old chopping board and went out to buy the new chopping board. Citation issued critical.

RECOMMENDED ADDITIONAL INSPECTION/SERVICE BY PEST CONTROL COMPANY. CAULK AND SEAL SMOOTHLY ALL GAPS, CREVICES AROUND PLUMBING, CONDUITS AND ATTACHED SHELVING. CLEAN ALL LOCKERS INSIDE AND OUT.
