All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. FRONT PREP AREA HAND SINK NOT CLEAN, NON-FOOD ITEMS STORED NEXT TO BASIN, INSTRUCTED TO KEEP HAND SINK CLEAN AND FREE OF ITEMS STORAGE.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. SLOW DRAINAGE AT HAND SINK DUE TO DEBRIS IN DRAIN, INSTRUCTED MGR TO KEEP DRAIN FREE OF DEBRIS AND MAINTAIN.
Equipment and utensils should get proper exposure to the sanitizing solution during the rinse cycle. Bactericidal treatment shall consist of exposure of all dish and utensil surfaces to a rinse of clean water at a temperature of not less than 180F. OBSERVED EMPLOYEE WASHING MULTI-USE UTENSILS WITHOUT USING ANY SANITIZER , ONLY SOAP AND WATER THEN DRYING THEM WITH PAPER TOWELS, 3COMP SINK NOT SET UP PROPERLY DURING WASHING, INSTRUCTED MGR TO WASH, RINSE AND SANITIZE THEN AIR DRY UTENSILS.

Cleaning equipment shall be properly stored away from food, utensils, equipment, and clean linens. REAR STORAGE ROOM WITH CLUTTER, INSTRUCTED TO REMOVE CLUTTER AND BETTER ORGANIZE.
MUST DETAIL CLEAN THE EXTERIOR AND INTERIOR OF REACH IN STORAGE FREEZER AND COOLER TO REMOVE SPILLS AND DEBRIS.
FLOORS NEED DETAIL CLEANING AT REAR AND FRONT STORAGE ROOMS TO REMOVE SPILLS.
MUST REMOVE AND/OR ORGANIZE CLUTTER IN STORAGE ROOMS TO PREVENT HARBORAGE FOR RODENTS AND OTHER PESTS. MUST ELEVATE STOCK 6INCH OFF THE FLOOR AND AWAY FROM WALLS.
