Matos Cheese Factory


The Matos Cheese Factory is a favorite of locals and visitors to Sonoma County because of their rich cheese that pair wonderfully with the wines found in the area. A trip to the cheese factory makes for the perfect afternoon outing. The factory is set down a dirt road and they make a cheese, called St. Jorge, that is described by some as a cross between " extra sharp cheddar, parmesan, Monterey Jack and havarti." The cheese not only pairs well with wine, but goes with beer to. The factory is difficult to find, but there are signs marking the way, so you have to look carefully while driving and searching. The retail part of the factory provides samples of cheese and friendly service to help you enjoy your visit. The shop is small and simple, with just a bell on the door and a place to sample the cheese. Little else is sold at the shop besides the cheese. The St. Jorge cheese melts well and is considered a versatile cheese. Some people grate it on pasta like parmesan or cook with it in dishes like Mexican and Italian entrees. It has been used on pizza or eaten plan and drizzled with balsamic vinegar. Many love the low cost of the cheese and buy several pounds to carry them through until their next visit.
