--Observed cake and ice in ice bin in the waitress area behind the counter from the stool area were left uncovered and exposed to potential contamination. Both were covered during the inspection.
Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
--Potentially Hazardous Food was held at 64-65°F (cut lettuce, cut tomatoes) in front grill prep area counter rather than 41°F or below as required. No means of cold holding (i.e. surrounded with ice or a use of a cooler). Regulations reviewed and items discarded. This was previously cited on a morning inspection in the same area with respect to shelled eggs. Owner stated that he will keep cold and will look into buying a small prep cooler for this area.
Food Temperature Measuring Devices Calibrated (46.691(b))
--Thermometers for ensuring proper food temperatures were not calibrated properly. The two food probes provided both read 28*F in a 32*F ice bath. Both were calibrated and corrected during the inspection.
