--Pasta meat sauce hot held in small warmer unit had product temperature of 104*F, due to lack of water in the double boiler pan setup. PIC discarded all product, about 2 pounds, during inspection. USE your stem thermometer to check hot holding, cooking, cooling temperatures as per given chart.
- Equipment Openings, Closures & Deflectors (46.582)
--Front access door (with wood handle) on top pizza oven compartment needs replaced, door material missing, not attached.
- Dispensing Equipment for Protection of Equipment & Food (46.583)
--Paper towel holder broken in employee restroom, need a holder of some kind to keep roll towels clean/available at handsink.
- Frequency of Cleaning Cooking & Baking Equipment & Microwave Ovens (46.713)
--Buildup of black grease / oil collecting on top panel of pizza oven conveyor compartments (top and bottom). Clean as needed.
- Lighting Intensity (46.943)
--One (1) light fixture not working above pizza oven area, one (1) bulb not working in fixture above dough area, and one (1) above service counter. 50 foot candles of illumination required above food prep areas.
- Outer Openings Protected, Exterior Walls & Roofs Protective Barrier (46.922(e)(f))
--Back screen door needs cleaned (tomato splash), and repaired, fabric torn from framework, before warm weather returns and flies are of issue.
- 3 C.S, 6501-6510 (FEC)
--Eric Campbell's PA FEC expired 11/11/13 and to date, no other employee has completed a certification course. In that over 90 days has elapsed, a warning letter has been requested to initiate an enforcement action if need to achieve compliance.
