--Dirty knives stored with clean knives on a magnetic strip. All were removed, cleaned, and sanitized.

--Observed black residue coming from behind the slim panel in the back inside of the ice making unit. The unit was recently cleaned, but apparently this area was not done. Ice was discarded and the insides were thoroughly cleaned/sanitized during the inspection. Monitor to ensure compliance.
- Frequency of Cleaning Cooking & Baking Equipment & Microwave Ovens (46.713)
--Baking equipment not being cleaned every 24 hrs. Heavy residue buildup present on the bread baking pans. Cleaning began during the inspection. Complete today.
- Rinsing Procedures (46.718)
--Observed the wash in the middle bowl of the 3-bowl sink in the donut room and the back baking room with no rinse being done. The proper method of wash, rinse, and then sanitize was discussed and sinks were then set up properly.
- Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
--Dust buildup present on most of the walk-in cooler fan screens in the facility. Schedule to be cleaned on a more frequently to maintain compliance.
- Plumbing Facilities in Good Repair, Cross Connection Prohibited, Scheduled Inspections, Cleaning Water Reservoirs (46.825(b)-(e))
--Water was observed leaking from the Produce 3-bowl sink faucet arm base. Repaired during the inspection.
- Outer Openings Protected, Exterior Walls & Roofs Protective Barrier (46.922(e)(f))
--Noted in the receiving area: the single door, the two door, and the right and middle wooden bay doors have gaps present at the bottoms and do not protect against the entry of insects, rodents, and other animals.
