--Potentially hazardous ready-to-eat food prepared in the food facility and held for more than 48 hours are not being date marked. Regulations reviewed and implemented during the inspection.
Cutting Surfaces Maintained (46.672)
--Observed deeply scored cutting boards not resurfaced or discarded as required. This pertains to two cutting boards in the waitress prep tables and the long one at the larger True prep cooler at the grill line. The latter one had a good side below and was flipped. The two waitress ones are in poor repair on both sides. Correct so smooth/cleanable and free of scoring as needed.
Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
--Noted food residue buildup on the walk-in cooler shelves. PREVIOUSLY CITED.
Storing Clean Items (46.774)
--Observed single-service, single-use articles stored in a prohibited area. Observed the back shed like area attached to the back of the kitchen has a dirt/gravel floor w/ walls not sealed to the outside. NO single service nor food stock can be located in this area. BRING all items back into the facility TODAY.

--Plumbing system not maintained in good repair - observed water leaking from the shut off valve of the 3-bowl sink.
