Chemical Sanitization for Mechanical or Manual Warewashing Equipment (46.674(d))
--Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. Note : dishwasher has the capability to be operated as both a low temperature chemical sanitize or a hot water sanitize unit. was switched to hot water sanitize and a hot water sanitize test strip was ran through and unit was operating properly for hot water sanitize IE , plate surface temperature of 160*f and a water temperature of 182*f. COS NOTE : Ecolab was called at the time of this inspection and repairs will be made that the unit can properly work as a low temp / chemical unit again Also note : equipment previously washed / sanitized was re- washed and re- sanitized. Firm must check unit daily with test strip paper to make sure unit is sanitizing at 50 ppm or above
