--Cook is in this place prepping for evening meal service. There was chicken and shrimp within containers in water to thaw. The water was not running. Also, raw liver was on the counter top thawing (such products are to be thawed in an environment of below 41 deg. F.).

--Area behind stove has a heavy buildup of grease and debris, needs cleaned. The inside of the microwave has buildup of food splatter, needs cleaned.
- Outer Openings Protected, Exterior Walls & Roofs Protective Barrier (46.922(e)(f))
--The screen on the back door has a gap along the bottom and does not protect against the entry of insects, rodents, and other animals.
- Sanitizing Solution Testing Device Provided & Used (46.634 & 46.674(e))
--There is no measurable sanitizer in the final rinse of the warewashing machine. Facility does not have test strips to monitor the level of chlorine (sanitizer).
- Cleanability of Floors, Walls, & Ceilings (46.921)
--Floor in the kitchen area is missing tiles and is not a smooth, easily cleanable surface.
- 3 Pa.C.S.A Secs. 6501-6510 (FEC)
--No certified safe food handler here. Manager stated he was unaware of the requirement, and thought that PLCB training was all that was needed. Owner stated he will take a ServSafe or equivalent course within the next couple months. NOTE: Although this matter was noted in previous inspection, facility has been under new ownership since those inspections.
