Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
--Ready to eat potentially hazardous food (RTE PHF) in the grill prep cooler was probed at 46-47*F (various cheeses 47*F ham 46*F). All PHF items discarded. Bottom ambient air was checked at 39*F. See item #31.
Materials for Surfaces that are Nonfood-Contact Surfaces (46.522)
--Observed rust buildup on the walk-in cooler shelves and one rack that actually had the plastic coating chipping off which could cause contamination. Replace so smooth and cleanable again.
Cooling, Heating, & Holding Capacities (46.611)
--Noted the grill prep cooler is not maintaining PHF in the top food inserts at 41*F or less. Bottom was checked at 39*F. Unit thermostat knob was increased to the highest setting, but the temperature INCREASED 2*F to 41*F. All remaining food in the top inserts were removed to another cooler. Do NOT use the top rail until repaired and can maintain 41*F or less for PHF items. Monitor the bottom of the cooler to ensure 41*F or less to keep any PHF in this area.
Using Dressing Rooms & Lockers (46.981(j))
--Food employee jackets observed stacked on food stock in tow areas although lockers and coat racks are provided. All jackets were removed to proper areas.
