KDA_2_10311B - --Two customers pass through the kitchen from the back door. Education provided on non-employees being in the kitchen and food preparation areas.
KDA_3_50116A2 - --shredded lettuce in metal bowl floating in larger plastic bowl of ice water with the top portion of the lettuce above the water line at 52. Placed in the bowl at the start of food preparations at 11:00am but temperatures get elevated during the next hour. Normal hours are closing at 2:00pm. So the correction was to place in the Reach in cooler and maintain 41 or less using this method unless the bowl can be kept from floating from having more water than ice to hold in place.
KDA_3_50118A2 - --one bag each of slice turkey and ham with not date mark in the make table. According to cook and waitress these were sliced on Saturday. Marked bags
KDA_3_60311B - --Has consumer advisory on menus but doesn't have the items that would be under-cooked with the asterisking related to the warning. Waitress marking those menus while on site.
KDA_4_204112B - --No ambient air temperature device was located in the make table. The unit was holding shredded lettuce at 43 and in bottom section of unit turkey and ham was probed and recorded at 43. Will get one for this unit
KDA_4_70211 - --Auto dish machine in active use and found not to be sanitizing. Test was done and observed no detect for proper strength of sanitizing. Supply bucket with chemical found to be full. Suspected that machine may not have been primed when changing to new bucket supply. Primed the machine for 1 1/2 minutes and purged the air bubbles out, within the supply line tubing to the machine. Another test cycling run of the machine then resulted in a proper recording of 100-200 parts per million of chlorine.
