In the bottom of the maketable (MT), raw chorizo was stored directly over ready-to-eat (RTE) hotdogs and deli ham. Corrected on site (COS): eggs and chorizo moved to bottom shelves. KDA_3_30412B - --The handle of the scoop in the ice bin was stored in direct contact with ice. KDA_3_30511A1 - --A sack of potatoes were stored directly on the floor under the salsa prep table. COS: potatoes placed on shelf. KDA_3_50116A1 - --Cooked cactus, stored in a bowl on top of the steam table, was at 112.4F. COS: reheated and held in steam table. KDA_3_50116A2 - --Scrambled eggs in a bowl on the counter next to the steam table were at 59.9F. Person in charge (PIC) said they had been on the counter since approximately 7am. COS: placed in ice bath and moved to small RIC. Temperature was 37.8 after approximately forty-five minutes. On a shelf next to the grill, cooked beef was at 56.7F and cooked pork was at 63.6F. PIC said they had been out for approximately one hour. COS: placed in ice bath and moved to large RIC. KDA_4_90411A - --Assorted single-service trays were stored with their food-contact surfaces facing up. COS: inverted. KDA_7_20111A - --A bottle of degreaser was stored in direct contact with a jar of jalapenos stored under the salsa prep area. COS: Degreaser moved to chemical storage. KDA_8_30411A - --The food license is posted behind the counter, out of customer's view. KDA_Defacto - --Chlorine sanitizing solution in wiping cloth bucket at approximately 150 parts per million (ppm). --Frozen good. --In large RIC, beans were at 49.8 after approximately three hours fifteen minutes and rice was at 50.1 after approximately two and a half hours. There were assorted items prepared approximately three hours earlier between 46F and 50F in the large RIC.
