COS: placed in ice bath and moved to small RIC. Temperature was 37.8 after approximately forty-five minutes. On a shelf next to the grill, cooked beef was at 56.7F and cooked pork was at 63.6F. PIC said they had been out for approximately one hour. COS: placed in ice bath and moved to large RIC.
- KDA_4_90411A - --Assorted single-service trays were stored with their food-contact surfaces facing up. COS: inverted.
- KDA_7_20111A - --A bottle of degreaser was stored in direct contact with a jar of jalapenos stored under the salsa prep area. COS: Degreaser moved to chemical storage.
- KDA_8_30411A - --The food license is posted behind the counter, out of customer's view.
- KDA_Defacto - --Chlorine sanitizing solution in wiping cloth bucket at approximately 150 parts per million (ppm). --Frozen good. --In large RIC, beans were at 49.8 after approximately three hours fifteen minutes and rice was at 50.1 after approximately two and a half hours. There were assorted items prepared approximately three hours earlier between 46F and 50F in the large RIC. Discussed using ice baths when appropriate, stirring items frequently, not covering containers completely while cooling, and the effects on other food of putting large numbers of hot items in the RIC at once. --In steam table: pork with chili rojo - 169.2F
