4-302.14 - --The chlorine test strips are discolored to an off-white color. The box of the strips says to not use the strips if they are discolored. Let the kitchen manager know that she needs to replace these strips. Reminded her of the 1-2-3 method (1 cap of bleach to 3 gallons of water).
KDA_3_30412B - --The spoon being used as a scoop in the salt above the stove has fallen down so that the handle is in direct contact with the salt.
KDA_4_20211A2 - --There is a rubber spatula in a drawer in the kitchen that has a spot that is peeling off and hanging from the spatula. COS - this was discarded.
KDA_4_90311B - --There are non-inverted and uncovered stainless steel bowls and pans in the kitchen and dry storage room.
KDA_4_90311C - --There single-use paper plates, aluminum pans, and stryofoam plates in the dry storage room. These are outside of their original protective packaging, neither covered nor inverted.
KDA_6_20214 - --The restroom door to the women's restroom in the dining room is not self-closing.
KDA_6_50119 - --The restroom door to the women's restroom is open during the inspection. Cleaning and maintenance are not being performed.
KDA_7_10211 - --There is a white bucket with a clear liquid in the sink. This bucket is labeled "Spoons." The kitchen manager said this is bleach water. Corrected on Site (COS) - she added labeling to the bucket to indicate it had sanitizer inside.
KDA_Defacto - --Hot water dishwasher: 176.0 F --Items in crockpots were started heating approximately 10 to 20 minutes previously. --Milk Cooler: Milk - 37.2 F Walk-in-Cooler: Eggs - 41.2 F --The bleach in the kitchen, which the kitchen manager said she does use on food contact surfaces for sanitizing, is not labeled for use on food contact surfaces. It calls for a rinse after use, and says "Do not use on silverware." --There are single-use plastic containers that come with products in them and have been cleaned and are being reused to store other items (salt, sugar, powdered sugar). These containers are not recommended for reuse because they are not as durable and can break down faster. --There is a half a head of lettuce in the walk-in-cooler with no date marking. The kitchen manager said this is from someone's event over the weekend and is not used by the school kitchen. --Wiping cloth stored in 100ppm bleach water.
