KDA_3_20211A - --Cut lettuce in a salad was received at 48 degrees at 9:54 am. The manager called the main kitchen in Pittsburg. The salad was removed from the walk in cooler at 8:30 am. As per the manager, the food is delivered as soon as it is repacked into individual meals, and the last delivery driver is back at the site by no later than 11:30 am. Suggest using time as a public health control for foods that cannot be held at the proper temperatures.
KDA_4_30111 - --The insulated chest holding cut lettuce in a salad is not holding the lettuce at 41 degrees or less, it was received at 48 degrees.
KDA_4_60111A - --In a cabinet, a plastic food container being used to store sugar has the manufacturer's sticker on the outside of the container.

KDA_6_501111A - --Two live roaches were in an upper kitchen cabinet (next to the white reach in cooler). Fresh rodent droppings: five in a kitchen cabinet on a bottom shelf (in the corner of the shelf) under the microwave and five on the floor in the dishwashing room in the southwest corner. As per the manager, they have a hired pest control service that sprays for insects and sets out sticky traps. Pest control method observed was sticky traps.
