4-302.14 - --There are quaternary ammonia tablets in the kitchen at the 3 vat sink. There are chlorine test strips provided, but no quaternary ammonia test strips. COS - the owner said he would prefer to use bleach over the quaternary ammonia anyways and removed the quaternary ammonia tablets from the establishment.
KDA_3_60311B - --The menus have a reminder posted that consuming raw or undercooked product can cause illness. They do not have a disclosure posted. They offer beef products to order upon request. COS - they are going to put asterisks in the menus next to the items that can be cooked-to-order. The owner also wants to redo the menus and will add the asterisks to it at that time.
KDA_4_90311A - --In the pantry off the kitchen there is a box of Styrofoam cups being stored directly on the floor.
KDA_4_90311B - --There are non-inverted and uncovered dishes in the kitchen and pantry off the kitchen.
KDA_4_90311C - --In the pantry off the kitchen there are Styrofoam single-use bowls and plates being stored outside of their original protective packaging, neither covered nor inverted.
KDA_5_20515B - --When the hand sink in the bar was turned on, the sink next to it began to slowly fill with water as well as the hand sink itself slowly filling. The owner removed the water with a water transfer pump system that is installed.
KDA_6_20215A3 - --There are narrow gaps around the door to the outside from the kitchen where sunlight can be seen shining through while the door is closed.
KDA_6_30112 - --The paper towels dispenser at the hand sink in the kitchen is broken and the paper towels had fallen to the floor. Corrected on Site (COS) - the owner supplied paper towels at the sink and is planning on fixing the paper towels dispenser.
KDA_6_30114 - --There are no hand washing signs posted at the hand sink in the bar or the restroom. COS - provided with signs to be posted.
KDA_6_50119 - --The restroom door is propped open. Cleaning and maintenance were not being performed during the inspection.
KDA_7_10211 - --There is an unlabeled spray bottle below the 3 vat sink in the kitchen. An employee said this was degreaser. COS - she labeled the bottle.
KDA_Defacto - --All PHF foods are being stored in the freezer. --There is a package of meat in the freezer that is labeled "Not for Sale." The owner said that this belongs to the previous partner that is no longer with the business and that this gentleman should be coming to pick it up. --This is a licensing inspection for an establishment that is not currently open. There is limited food on site, and no food handling occurring during the inspection.
