KDA_3_50115A - --In storage trailer, 2 containers of cooked refried beans were setting on countertop to cool for approximately 20 minutes, per owner. Small container of beans was 84F, large container of beans was 111F. COS - containers placed into an ice bath for rapid cooling.
KDA_3_50116A2 - --In refrigerator (storage trailer), a container of cooked shredded beef was 48F and a container of cooked cactus/beef mixture was 50F. Owner said both food items had been cooked and cooled the prior evening, over 6 hours ago. Corrected on site (COS) - beef and pork mixture were disposed of in trash bag and placed in dumpster.
KDA_3_50118A2 - --In storage trailer refrigerator, 2 containers of cooked cactus/beef mixture did not have consume by date. Owner said they were prepared on 12/07/15, over 24 hours ago. COS - containers dated.
KDA_6_50111 - --The vinyl flooring just inside of mobile unit doorway was missing, exposing raw wood.
KDA_Defacto - --Cold Holding: Refrigerator (mobile unit) - sliced ham 38F. Small refrigerator (mobile unit) - 38F ambient. Refrigerator (storage trailer) - beef mixture 42F. Freezers ok. --Hot Holding: Make table - pork mixture 169F.
