COS-Voluntary discard. In deli walk in cooler, raw beef at 47F, potato salad at 48F, cole slaw at 48F. Person in charge stated cole slaw and potato salad made 4 hours prior. COS-Placed items in separate cooler to rapid cool. In kitchen make table, cut tomato stored in pan on top of other pans and above food rim level and measured at 47F. Ambient air of make table at 40F. Person in charge stated tomatoes were removed from cooler to prepare sandwiches and placed back in make table 15 minutes prior. COS-Educate, placed in separate cooler to rapid cool.
