4-302.14 - --The employee present is unable to provide chlorine test strips as he is unaware of them having any. Explained the 1-2-3 method (1 cap of bleach to 3 gallons of water) to him for the time being, let him know test strips would need to be purchased.
KDA_3_50118A2 - --In the cooler in the kitchen there are four tubs filled with opened, ready-to-eat polish dogs. There are four tubs filled with opened, ready-to-eat hot dogs. The employee said that these were all opened on Tuesday (8/11). COS - he made sure they were all date marked.
KDA_4_20211A2 - --There is a chipped plastic container in the cooler being used to store hot dogs. COS - the hot dogs were put into a Ziploc bag and the container removed.
KDA_4_90311C - --Next to the microwaves there is a stack of Styrofoam plates and a stack of paper trays that are being stored outside of their original packaging, neither covered nor inverted.
KDA_5_20411A - --There is no hand washing sink in the kitchen/prep area. There is only the 3 vat sink. Upon speaking with staff, they are using one of the sinks at the 3 vat sink as a hand sink. They do not have a variance for this process. COS - providing with a variance request form today. It is being completed and submitted today during the inspection. They are getting a variance to use one vat of the 3 vat sink as a hand sink, and the other two for dish washing as they have very few dishes they need to do and can easily work with two sinks for it.
KDA_6_20214 - --The doors to the men's and women's restroom are not self-closing.
KDA_6_20215A3 - --The back door to the establishment has a 1/4 to 1/2 inch gap along the bottom of the door where sunlight can be seen shining through while the door is closed.
KDA_6_30114 - --There was no hand washing sign posted at the hand sink in the kitchen or at the hand sink in the women's restroom. Corrected on Site (COS) - provided with signs to be posted.
KDA_6_50119 - --The doors to the men's and women's restroom were open during the inspection. Cleaning and maintenance were not being performed.
KDA_7_20111B - --In the back stock room there are bottles of Propane Fuel on a shelf directly above canned drinks (beer) on the floor below. COS - the employee moved the propane fuel.
KDA_Defacto - --An employee mentioned that they thaw out their hot dogs/polish dogs in one of the 3 vat sinks with water. Explained to employee that this could not be done as these sinks are directly plumbed into the sewer line so food may not be placed inside of it. --Cooler in Kitchen: Lil Smokies - 42.7 F --Providing hand washing educational handout. --When asked, an employee described the dish washing process as scrubbing with hot soapy water, rinsing it off, and putting it in the drying rack. Explained that dish washing required in an establishment serving the public requires a sanitizing step. Providing dish washing handout. Did not observe dish washing during the inspection.
