The MT in the kitchen had the following items with the following temperatures: diced tomatoes 50 F, sliced tomatoes 48 F, shredded lettuce 47 F, sour cream 50 F, pico de gallo 54 F, raw pork chorizo 59 F, raw shrimp 55 F, raw tilapia 55 F, cooked carrot/ pepper dish 53 F,raw beef steak 53 F, raw chicken 57 F, salsa 55 F, 58 F, salsa verde 57 F, sliced american cheese 68 F. At 1:08PM PIC said things have been in the MT since 9:00 AM or before. COS, VD.
- KDA_3_60311A - --There is not a disclosure or reminder for undercooked items on the menu, huevos rancheros and steaks. COS, a poster was hung on the wall for customers to view.
- KDA_4_10211A1 - --In the RIF raw beef steaks and raspberry cheesecake bites were stored in direct contact with the manufacturer's non-food grade cardboard box. COS, put in food grade containers. In the WIC raw beef steak was stored in a non-food grade thank you bag. COS, moved to a food grade container.

- KDA_4_60111A - --3 knives stored as clean in the kitchen, 1 on the bottom shelf of a prep table and 2 in the drawer on the prep table by the back door. COS, moved to be cleaned and sanitized.

A bucket of sudsy water on the bottom shelf of the beverage counter was not labeled. PIC said it was soap water. COS, labeled.
