KDA_3_50116A2 - --A container of shredded cheese in an ice bath on the counter by the steam table had a temperature of 50 F. PIC said it has been there for 45 minutes. COS, moved to the WIC. The MT in the kitchen had the following items with the following temperatures: diced tomatoes 50 F, sliced tomatoes 48 F, shredded lettuce 47 F, sour cream 50 F, pico de gallo 54 F, raw pork chorizo 59 F, raw shrimp 55 F, raw tilapia 55 F, cooked carrot/ pepper dish 53 F,raw beef steak 53 F, raw chicken 57 F, salsa 55 F, 58 F, salsa verde 57 F, sliced american cheese 68 F. At 1:08PM PIC said things have been in the MT since 9:00 AM or before. COS, VD. KDA_3_60311A - --There is not a disclosure or reminder for undercooked items on the menu, huevos rancheros and steaks. COS, a poster was hung on the wall for customers to view. KDA_4_10211A1 - --In the RIF raw beef steaks and raspberry cheesecake bites were stored in direct contact with the manufacturer's non-food grade cardboard box. COS, put in food grade containers. In the WIC raw beef steak was stored in a non-food grade thank you bag. COS, moved to a food grade container. KDA_4_30111 - --The MT is not holding PHF's at 41 F or below. Ambient 51.8 F. KDA_4_60111A - --3 knives stored as clean in the kitchen, 1 on the bottom shelf of a prep table and 2 in the drawer on the prep table by the back door. COS, moved to be cleaned and sanitized. KDA_5_10311B - --There was no hot water in the establishment upon arrival. The water in the 3-vat sink 81 F, the water at the handwashing sink in the kitchen 81 F. A repairman discovered the pilot light on the hot water heater was out. COS, pilot light lit and hot water was restored to the establishment. Hot water temperature 103 F. KDA_7_10211 - --In the storage area by the RIC a 5 gallon bucket of red liquid was not labeled. PIC said it was dish detergent. COS, labeled. There were 3 bottles of pink liquid on the back of the mop sink that were not labeled. PIC said it was dish washing detergent. COS, labeled. A spray bottle of clear sudsy liquid in the dining room did not have a label on it. PIC said it was bleach water. COS, labeled. A bucket of sudsy water on the bottom shelf of the beverage counter was not labeled. PIC said it was soap water. COS, labeled. KDA_7_20111B - --On a shelving in the storage area across from the WIC a container of Clorox bleach was stored over a bag of onions. COS, moved. KDA_Defacto - --chlorine test strips provided The high temperature warewashing machine reached on 154 F. There were no dishes being washed at the time of the inspection.
