Pan of sliced tomatoes at bottom of MT at 53.2 F with 11:00 AM date and time. Sliced cheese at top of MT at 52.6 F. shredded lettuce at 58.2 F - Owner / Manager is using time 4 to 6 hours depending on temperature (above or below 70 F) and will VD any food past 4 to 6 hours.
