KDA_2_30114I - --An employee at the register handled money from a customer, then used hand sanitizer and grabbed a tissue paper to grab donuts for the next customer. Corrected on Site (COS) - spoke to employee and owner about hand sanitizer not being an accepted replacement for hand washing. Worked with them on their options. They are now using tongs to bag/box up donuts after handling cash from customers.
KDA_3_30111B - --The owner was preparing ready-to-eat donuts in the back room. She grabbed ready-to-eat sprinkles with her bare hands to put on the donuts. COS - the sprinkles were removed. Spoke with her about her options for preparing donuts/putting sprinkles on them. She is currently using a container to shake sprinkles out onto the donuts.
KDA_4_60111C - --There is a layer of dust over most of the equipment in the kitchen and back room from donut preparation. There is food crumbs/debris in the base of the GE cooler in the back room and in the drawers of this cooler. The back room has a layer of dust over tables, cabinets, coolers, ovens, and other equipment, especially near the kitchen where donuts are prepared. There is an accumulation of dust on the fan in the office are and on top of the microwave in the kitchen.
KDA_5_20212A - --There is no mixing valve at the hand sink in the employee's restroom. There is a separate faucet for the hot water and the cold water. COS - the owner completed a variance request and provided it to be emailed to the state today during the inspection.
KDA_5_20315 - --There is a vented dual check valve upstream of the screen and brass pump for the soda machine carbonator. There is a dual check valve without a vent downstream of the screen and brass pump. There is no dual check valve with an intermediate vent downstream of the brass pump and screen. Spoke directly with the soda pop company today during the inspection, provided them with a picture of the machine and information from the food code on where a vented dual check valve is required. They said they would have a technician out today to install a vented dual check valve downstream of the brass pump.
KDA_6_20214 - --The doors to the men's public restroom and the employee's restroom are not self-closing.
KDA_6_50111 - --There are 12 stained ceiling tiles, some sagging down, in the back room/office area.
KDA_6_50112A - --There is a layer of dust from donut preparation on the floors and walls in the back room and kitchen.
KDA_6_50119 - --The doors to the men's restroom and the employee's restroom were open during the inspection. Cleaning and maintenance were not being performed.
KDA_7_20111A - --In the back room near the restroom there is a spray can of stainless steel cleaner directly next to/against a box of napkins.
KDA_7_20111B - --In the back room near the restroom there is a spray can of stainless steel cleaner directly above a package of paper towel rolls.
KDA_7_20711B - --There is an employee's bottle of Imodium sitting on the ledge above the dough prep table. The medicine is directly above cheese on the prep table. COS - the medicine was moved into the office area.
