3-501.17(A) - --In the walk-in-cooler there is a container of BBQ Beef that is dated 3/11/15. Upon asking the kitchen manager she stated that the 3/11/15 was when the beef was made and frozen. She pulled it from the freezer today (10/13/15) to thaw. Corrected on Site (COS) - she updated the date to reflect freezer times (M & F 3/11/15, T 10/13/15, Use by 10/18/15).
KDA_3_30212 - --There is an unlabeled bag with brown powder in the cabinet. The kitchen manager verified this was cinnamon. COS - she discarded the cinnamon. She said it had been used in a classroom and brought back and it's her general policy to throw things away once they have left the kitchen rather than keeping them.
KDA_4_20211A2 - --The lid to the lettuce container is chipped on the corner. COS - the kitchen manager replaced it with a new lid and discarded the chipped lid.
KDA_Defacto - --Hot Case: Stromboli - 140.2 F --Kenmore Cooler (Kitchen): Yogurt - 41.1 F, Walk-in-Cooler: Cheese - 40.5 F, Milk Cooler 1: Milk - 37.1 F, Milk Cooler 2: Milk - 34.3 F, Kenmore Cooler (Dining area): Milk - 41.9 F --Kitchen manager provided chlorine test strips. --Thawing bbq beef in walk-in-cooler. --The chopped lettuce in the cooler was identified as having been opened today. --The label on the bleach water bucket is wearing off. Please keep in mind that once it is no longer legible it will need to be relabeled. --The wiping cloth is being stored in less than 50 ppm chlorine. COS - the kitchen manager remade the sanitizer to 100ppm chlorine. She said she had made the sanitizer up this morning before breakfast. Let her know that it had probably just evaporated over time.
