3-302.11(A)(2) - --In the white cooler in the kitchen there is raw chicken being stored directly above raw ground beef patties and raw pork bacon. COS - this was rearranged. KDA_3_30211A1b - --In the white cooler in the kitchen there is a tub of egg wash being stored directly above a bag of precooked sausages. Corrected on Site (COS) - this was rearranged.
KDA_3_50116A2 - --On ice on the kitchen counter there are three items out of temperature for cold holding. They are as follows: Diced Ham - 48.0 F Shredded Cheese - 52.2 F Ground Sausage - 62.8 F Per staff, these have been out since approximately 6am when the ice bath was set up. It was approximately 930am when the temperature was taken. COS - the items were put into the freezer to be rapidly cooled down. Explained to staff that the temperature problem was likely that the ice bath only reaches partly up the containers and the food is much higher in the containers than the ice bath reaches.
KDA_4_60111A - --In the kitchen the meat slicer has food residue on the back of the blade guard and on a spot on the front of the blade. Staff said the meat slicer has not been used since yesterday (9/8/15). COS - the meat slicer was cleaned. There is a container storing food in the cooler that has sticker residue on the outside of the container. There is a pitcher stored as clean in the waitressing area that has a barcode sticker on the bottom. There are plastic containers being reused to store flour, sugar, etc in the dry storage room that have sticker residue on the outside from the labeling for the original item in the container. These stickers are all identified as remaining from before the previous cleaning of the container and not having been removed in the cleaning process.
