Observation:Observed container of raw shell eggs on walk-in cooler shelf above precooked foods, moved to bottom shelf, corrected on site.
- Food storage - preventing contamination from the premises
Observation:Observed tops of salad and grill prep coolers were left open, food containers were not covered
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation:There were no thermometers in the glass door cooler at bar and wait station, salad prep cooler, and drawers under grill.
- Using a handwashing sink- operation and maintenance
Observation:Observed parts from old grill, step ladder, shelving and mop bucket blocking access to kitchen handsink. A photo was taken of this arrangement.
- When to wash
Observation:Observed employee sneeze or cough into cloth towel then use towel to wipe hands. Discussed using paper towels, employee washed hands and placed towel with soiled towels in bag, corrected on site.
- Foods are cooled using appropriate methods
Observation:Observed deep plastic container of cooked chicken cooling on pizza prep table at room temperature, chicken was 113 degrees. Chicken transferred to small bags on sheet pans and placed in freezer to continue cooling, corrected on site.
- Ambient air and water temperature measuring devices are accurate to ±1.5°C or ±3°F and are designed to be easily readable
Observation:Thermometer in pizza prep cooler had separated liquid, no longer able to accurately measure the air temperature.
