Observed hamburgers in warming cabinets, one cabinet had burgers at 113 degrees, one cabinet had burgers at 101 degrees. Burger patties were cooked to 160-170 degrees then were placed on buns with cheese, placed into sheet pans then covered with parchment paper and aluminum foil. Person in Charge stated that the cabinets warm up enough to heat up the sandwiches above 135 degrees, and today if they are not at a minimum of 135 degrees before serving, she will reheat in oven. Corrected.
