Observation: Following areas in kitchen were soiled with grease, dust, or extinguisher residue: Hinges of equipment on cold hold units, freezers, and drawers, condenser screens of equipment, wire racks and shelving, flooring underneath all equipment and prep tables.

Observation: Vent hood is heavily soiled with dust and grease residue both interior and exterior surfaces. Must clean all areas of vent hood.

Observation: Thermometer was missing in the dorm style fridge on the end of the line.

Observation: Stand mixer in basement is in between the hand sink and mop sink.

Observation: Cutting boards on the front prep table, wood boos block prep table, and cutting boards below boos block table are scored and stained.

Observation: The following areas have become soiled and must be cleaned: microwave in kitchen, walk in cooler walls, line equipment (outsides, under, behind), and the FRP in the kitchen.

Observation: Basement has what appears to be unnecessary equipment. If not necessary to the operation then it must be removed.

Observation: Could not find chlorine test strips for the dish machine.
