Bleach water must be mixed 3/4 teaspoon to 1 gallon water to yield 50-100 ppm. Corrected at time of inspection
- Mechanical warewashing machine pressure measuring devices, data plate, internal baffles, and flow pressure device
Pressure gauge on final rinse must regisster 15-25 psi
- Cleanability of floors, walls, and ceilings
Walls, floors and ceilings must be smooth and easily cleanable. Vinyl floor covering in back work area is peeling and cracked. Ceiling paint is flaking off. This must re removed and repaired. Until then, food production should be moved away from these areas.
