Observation: Walk in cooler ambient temp at 50F, food temping at 45F. Large beer delivery prior to inspection had the door of the unit open for a long time. Food was placed on ice and the temperature of the unit was decreased to increase recovery time. Potato balls in prep line cooler holding at 43F. Unit temp adjusted to increase recovery time. Potato balls holding at 41F at end of inspection.
