Observation: Raw animal beef (49.7F), sliced cheese (50.1F) on the main cooking line not cold holding. Person In Charge moved to cooler and restocked with cold holding food.

Observation: Chocolate chip cookies and Snickerdoodle cookies not properly labeled.

Observation: No CFPM verification at time of inspection.

Observation: Employee drinks without a tight fitting lid in food preparation area. Drinks were moved and discarded by Person In Charge.

Observation: Gloved hand contact with raw animal foods had contact with ready to eat foods. Discussed cross-contamination with new Person In Charge.
- Preventing contamination from equipment, utensils, and linens
Observation: Gloved hand that touched raw animal foods used utensils on the cook line. Utensils then used in ready-to-eat food handling. Person In Charge moved contaminated utensils to warewashing.
- Storage and maintenance of wet and dry wiping cloths
Observation: Wet wiping clothes not properly stored in sanitizer solution. Person In Charge moved cloths to buckets.

- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation: Thermometers are not available in the front toppings reach in cooler and the reach in cooler by the fryer.
- Storage of clean linens, single-service, and single use articles
Observation: Boxes of single service products stored on the floor in the basement.
- Raw animal foods separated from each other during storage, separation, holding, and display
Observation: Employee handling raw philly meat at the grill and also handling bread for sandwiches with the same pair of gloves. Discussed cross contamination concern with manager. Utensils will be used to eliminate cross contamination, or gloves need to be changed by staff before handling meat and bread.

Observation: Snickerdoodle cookies for retail sale at the register are not labeled. ) Label information shall include: (1) The common name of the FOOD, or absent a common name, an adequately descriptive identity statement
