- Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
Observation: Several buckets of sanitizer were tested too low. New sanitizer was prepared once brought to managers attention. Discussed with manager importance of changing sanitizer more frequently.
- PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control
Observation: Shredded pork, cooked vegetables, and tofu were temped at 122*F in front service area hot well. Steam table had been turned down. Table was turned up during inspection and new food items were prepared.
- When to wash
Observation: Observed several employees donning gloves without washing hands. Stopped employees and discussed with manager when to wash between tasks and prior to donning gloves.
- Unpackaged food protected from contamination during preparation
Observation: Stock pot of beans and spices being prepared for cooking was stored directly on floor near food prep sink. Stock pot was moved to table during inspection.
- Physical facilities maintained clean: Cleaning frequency, restrictions, and methods
Observation: Excessive food and debris on floor and under prep tables and storage racks. Discussed with manager cleaning schedule and suggested cleaning more frequently.
- In-use utensils, between-use storage
Observation: Scoops for tofu and vegetables in prep cooler in front service area were stored directly in food items.
- Storage and maintenance of wet and dry wiping cloths
Observation: Wipe cloth was laying in basin of handwashing sink. Wiping cloth was moved during inspection.

- Material characteristics of non-food contact surfaces
Observation: The following areas are not smooth, easily cleanable, and non absorbent: beverage station needs caulked (left side by pop machine), beverage holes in back room and under pop machine, plastic from hoods, and escutcheon cover above ice machine.
- Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
Observation: Pop area has syrup spilled from leaking box.
