Observation: Large plastic container of gravy cooling in ice bath. Amount was broke down to 2 shallow metal containers and put in ice bath.

Observation: The salad cooler was holding at 52 degrees. All products (vegetables, butter, etc.) were moved to a different cooler and held at the proper 41 degrees.
