Using a handwashing sink- operation and maintenance Observed employees rinsing food thermometer and visibly soiled pans in kitchen handsink, observed employee filling wiping cloth container with water at kitchen handsink.
Roasts held at a temperature of 130°F or above Observed alfredo sauce in reach in cooler at 63 degrees - unit was on but not cold. Strawberries and alfredo sauce were discarded, unit was taken out of commission. Corrected - repeat violation. Observed sausage pieces in pan at room temperature, discarded, corrected.
Foods are cooled using appropriate methods Observed deep metal pans of gravy cooling in ice - ice is only a third of the way up to the level of gravy in the pans, gravy is more than 2 inches deep in the pans. The gravy was at 94 degrees, after cooling for 1 1/2 hours. Removed to freezer, corrected.
Linens- cleaning and storage Observed containers of clean silverware in close proximity to the paper towel dispensers at the wait station handsinks, in an area prone to contamination from splashing water. Corrected.
