Observation: The bottom inside of the two-door reach-in cooler is soiled with excess food debris. REPEAT VIOLATION
- A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
Observation: There is no small diameter probe for checking the smaller chunks of chicken and meat. It appears that very few food temperature checks are being conducted.
- Cooked PHF/TCS food cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F or below in 6 hours
Observation: The cooked chicken and beef in bowls in the reach-in cooler were 82-88 F after about three hours of cooling.
