Observation: Employees food (a bite of meat on prep table) during the preparation. Employee stated the was busy and hungry and removed the food. Corrected on site.
- In-use utensils, between-use storage
Observation: Cleaned metal silverware stored with eating face up and not inverted to prevent contamination. Employee verbalized, washed again and corrected on site.
- Food storage containers identified with common name of food
Observation: Working plastic containers with sugar, flour stored on the prep table with no label for identification of food. Marked the container and corrected on site.
- Posting of a valid license
Observation: The current license was missing and not visible for consumers to view. Te license found and posted on conspicuous place for consumers to view. Corrected on site.
- Indoor and outdoor surfaces
Observation: Lower section of wall in the corner under dishwasher has wholes and is missing the wall juncture around floor.(Photo attached).
- Separation from food, equipment, utensils, linens, and single service
Observation: Dish-wash detergent stored next to clean utensils on the serving trolley in the serving area.Employee removed and corrected on site.
- Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
Observation: Overall date marking is good,but several dishes with salad, sandwiches,and cream cheese not date marked in reach-in cooler. Employee stated they were all from yesterday or day before. She date marked them and corrected on site.
- Multiuse food contact surfaces are constructed of materials that are: durable, corrosion-resistant, non absorbent
can withstand repeated warewashing
- Mechanical warewashing machine temperature measuring devices, heaters and baskets, and automatic dispensers, and alarms
Observation: The dish machine only reached 112.5 degrees after 5 times running and 4 times after mechanical person re-adjusted and still reached maximum 116.7*F. Temperature measuring device on the machine also show the same temperature no more then measured.
- Bare hand contact with ready to eat foods
Observation: Employee is touching the pieces of cleaned grapes with bare hand. Employee warned and corrected on site.
- When to wash
Observation: New employee did not wash the hands before putting the new gloves and between touching the cleaned and dirty dishes. Employee verbalized understanding and corrected on site.This is REPEAT violation.
- Storage of clean equipment and utensils
Observation: Single use utensils stored on rack around 3 inches of the floor in the back storage area. Removed and re- organized storage and corrected on site.
