- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation: 1) Open-air produce refrigerator have no any thermometer inside. 2) All meet line display refrigerators have food thermometers with the diameter probes. The probes have been stored in the the plastic containers with standing water, which they change every week and measuring the ambient temperature every 4 hr.
- Food storage - preventing contamination from the premises
Observation: Watermelons and cantaloupes stored on the floor in walk-in produce cooler. Moved off the ground and corrected on site. This is a repeat violation.

Observation: Raw eggs were stored above sliced ham in beer walk-in cooler. Raw item must be stored below or separated from ready to eat food. Corrected at time of inspection.

Observation: Found several dented cans in grocery area. Shall remove and discard any can that has a major dent, is dented on the top or bottom rim, or is dented on the line seam along the side of can. Removed. Corrected at time of inspection.

Observation: Food stored on the floor in: 1) meat walk-in freezer 2) produce walk-in cooler. All food must be 6" off the floor to prevent contamination and cleaning purposes.

Observation: A bucket of QA sanitizer in meat department was too weak. Replace more frequently. Corrected at time of inspection. REPEAT VIOLATION
- Frozen PHF/TCS foods are properly slacked and thawed
Observation: Started to thaw Shredded Pork in standing water in meat department. Must either keep water running slowly over produce or thaw in cooler.
- Food employees hair is effectively restrained
Observation: Employee was not wearing hair restraint during ready-to-eat food preparation at produce department. Must wear hair restraint to keep hair from contacting exposed food.

Cut watermelon was temped at 46*F in reach-in cooler. Cooler temperature was 41*F. All potentially hazardous foods (such as cut melons) must be cold held at 41*F or below. Turned cooler temperature down. Corrected at time of inspection
