- Physical facilities maintained in good repair
Observation: Missing red flooring surface in the back storage area. Replace or fix to make a smooth, cleanable, and nonabsorbent surface.
- Posting inspection reports
Observation: The most recent inspection report is missing and not posted for consumers to view. Must post the inspection report at eye level for consumers to view. This is repeat violation.
- Package integrity
Observation: Several dented cans of (beans,Campbel's soups) stored on shelves. May not use any can that is dented on top, bottom, or side seals. Dented cans stored on dry goods shelf should be removed or discarded.
- Food storage - preventing contamination from the premises
Observation: Tostitos and salsa sauce stored on the floor next to exit door. All food must be stored at least (6" inches) above the floor. Remove on shelves.
- Sanitizers
Observation: A yellow bucket sanitizer in the prep area tested too strong above 400ppm at the time of isnpection. QA sanitizer concentration must be maintained between 200ppm and 400ppm. This was discarded during the inspection. Educated staff on how to make sanitizer solution at proper concentration. Corrected at time of inspection. COS
- Storage and maintenance of wet and dry wiping cloths
Observation: One wet wiping cloth not held in sanitizer on prep table. Wiping cloths used to clean food contact surfaces shall be maintained in sanitizer. Staff educated and verbalized understanding. This is repeat violation.
- Raw animal foods separated from each other during storage, separation, holding, and display
Observation: Raw chicken kebab stored above raw beef and pork in the display line cooler. Must store by the cook temperature- higher cook temperature items must be stored on lower shelf. Educated and provided handouts.
- Storage or display of food in contact with water or ice
Observation: In the walk-in freezer, next to the vents has amount of ice build up. Must defrost to prevent source of contamination.
- Plumbing system maintained in good repair
Observation: Handwashing sink in the prep area next to the displays coolers hand sink is leaking onto the ground. All plumbing must be maintained and in good repair. Repair as needed.
- Toilet room
receptacle, enclosed, fixtures clean
- Light intensity
Observation: The following coolers have no light bulbs or not working properly (no intensity): 1) Milk glass reach-in cooler, 2) “Masterbilt” cooler, 3) Stouffer reach-in cooler, 3) True reach-in cooler with creamer. Must provide adequate light intensity in the area where is food stored inside reach-in refrigerators for easily cleaning and maintaining. This is repeat viloation.
