Observation: Hot dogs in plastic begs not date marked in reach-in home style cooler in the bar. Manager date marked and corrected on site.

Observation: Has ice scoop stored on top of ice machine, not on try or bucket to protect from contamination. This is REPEATING Violation. Manager moved to the bucket and corrected on sit.
- Plumbing system maintained in good repair
Observation: The faucet of 3 compartment sink in the back bar was leaking
- Handwashing signage
Observation: No Handwashing sign in any restrooms reminding employee to wash their hands before and after returning to work. This is REPEAT violation.
- Equipment location, installation, repair, and adjustment
Observation: Right door of reach-in cooler has a torn gasket. --Observation: 1) Reach-in cooler temperature was between 47*- 56*F, and thermometer inside showing 60*F.
- PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
Observation: Reach-in home style cooler in back bar area had temperature 46-55*F. PHF/TCS foods not maintained at 41°F or below, hot-dogs with no date mark (45.6*) cheese (47-51*F)and dressing in small containers temped 52*. Manager discarded and removed the rest of food in another cooler.

Observation:True freezer in liquor storage area does not have shield over bulb and bulb appears to be glass, provide shield or coated bulb.

Observation:Has ice scoop stored on top of ice machine, must keep on a cleanable surface, such as tray or bucket to protect.
- Handwashing sinks-Numbers, capacities, location, and placement
Observation:Does not have handsink in room where ice machine and three compartment sink are located with liquor storage, must provide hanksink for use in this area. Will need to install with remodeling in near future.

Observation:1) Has no lid on ice bin at front counter, must provide a lid for this ice and keep on unless busy. Currently soda nozzle is touching ice, maintain separation of hose and ice bin below, consider relocating the soda gun, if possible.

Observation:Need handwashing signage directing staff to wash hands at sink in kitchen area and in both RR's, given examples today.

Observation:1) Ice machine has buildup on right end of stainless chute, empty, wash, rinse, sanitize and let air dry ice bin before refill. Must do monthly or more frequently if buildup occurs. 2) Microwave has dried food particles, clean and sanitize interior surfaces.

Observation:Has one wet cloth on kitchen countertop, must keep in sanitizer solution when not in use.
- Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
Observation:Using a Betco cleaner on food contact countertops, must use food grade sanitizer, such as chlorine sanitizer being used in bar for sanitizing. Will change product used for this purpose.
