Observation:Observed deep plastic, covered container of sausage gravy in pizza prep table at 100 degrees after about 4 hours of cooling. Container was transferred to freezer to speed up the cooling process. Corrected on site.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation:Observed a dial-stemmed food thermometer in milk cooler to monitor air temperatures, instead of using a refrigerator thermometer.
