- Outer openings are protected
Observation: There is daylight showing under the red door next to fridge. The gaps around the door must be sealed to prevent entry of pests. Suggest using door sweep.
- Heating, ventilating, and air conditioning systems design, installation, and cleaning
Observation:Vent is dusty above dish-washing machine. Must clean off dust build up on vent to prevent contamination. Clean as needed.
- Test kit provided and used to measure sanitizing solution concentration
Observation: Test strips expired at the time of inspection. Must have correct test strips for quat sanitizer to check concentration. Get new test strips.
- Indoor and outdoor surfaces
Observation: There are two red carpets in front of the exterior doors. The carpet may not be used in prep area because it is absorbent material. Remove carpet or replace with material that is smooth, easily cleanable, and non absorbent.
- Sanitizers
Observation: Quat sanitizer was too weak. Sanitizer must be maintained between 200 and 400ppm or at manufacturer's specification. Sanitizer remade at the time of inspection.
- Material characteristics of non-food contact surfaces
Observation:The wood shelf under dish-washing machine table is in poor condition(chipping wood). Non food contact surface must be easily cleanable, non absorbent and smooth. Must replace or repair as necessary.

Observation: Carpet rug in front of back door. Must use a non-absorbent material (example: rubber rug) Repeat violation.

Continue to use carpet rugs in front of back door. Must replace with rubber mats. Carpet absorbs substances creating risk for bacterial growth and not easily cleanable. REPEAT VIOLATION.

Pressure gauge not working. Must maintain water pressure at 15-25psi when in rinse cycle to adequately sanitize dishes. Repair. REPEAT VIOLATION.

Pressuer gauge must be maintained in the "green zone" during rinse cycle of dishmachine. (15-25 psi) guage is stuck on zero. Repair to ensure proper pressure.

using carpet runners near back entrance door. Carpet not allowed in food areas may replce with rubber or a cleanable runner. REPEAT VIOLATION.
