- Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
Observation: The dish machine in the prep area and the dish machine in the bar area was not sanitizing dishes.
- Storage of clean equipment and utensils
Observation: Sanitizer buckets were being stored on the floor. The unit was washed rinsed and sanitized then filled back up with sanitizer and placed on a shelf above the floor.
- Ventilation hood system and filters designed to be cleanable, prevent dripping, and are adequate to prevent grease or condensation from collecting on walls and ceilings
Observation: The walk in vent screens were not clean to sight.
- Food storage containers identified with common name of food
Observation: The water spray bottles were not labeled in the prep area. Employees labeled the units.

Observation: One chemical spray bottle was not labeled. The unit was labeled prior to me leaving.

Observation: One sandwich fridge unit was running at 50-52 degrees F. Sutter was called and was coming to fix the unit.

Observation: One hand sink did not have a hand wash sign posted by it.

Observation: The vents to the walk in were not clean to sight.

Observation: A wet cloth was in a microwave out of sanitizer solution.

Employees were changing gloves without washing hands. The employees were instructed to wash their hands prior to placing gloves on. Corrected at time of inspection
- Duties of PIC
The management has a sick policy in place but has failed to retain the signed policies from the other manager. Another sick policy was handed out and the management told me they would have the staff sign off on the policy again.
