Observation:chicken between temperatures of 60-70*F, food employee removed chicken so chicken is not above the cooling line. Person in charge voluntarily discarded chicken. Cut tomatoes between 43-44*F in open top refrigeration salad bar. Chef changed temperature dial on this day and voluntarily discarded tomatoes.

Observation: Scoop handle in contact with ice by ice at garnish area in kitchen. Observed container used as a scoop stored in sugar and scoop handle in sugar. Food employee removed containers to remove handles and discard product. Person in charge stated they have ordered scoop holders.

Observation:Front bar dish machine was unable to meet the criteria of 50 to 100 ppm of sanitizing solution. John contacted Ecolab to service unit.

Observation: Residue build-up on tomato dicier, deli-slicer around blade and exterior of unit, residue build-up on blade of mounted can opener. Food employee removed mounted can opener and tomato deicer, and deli-slicer to be cleaned and sanitize. Build-up of residue in ice machine tube and dispenser of unit. Person in charge removed tube to be cleaned and sainitzed. Corrected.

Observation: Bartender washed hands in bar 3-compartment sink. Bar has two hand washing sinks available that are not labeled.
