  • Basic - Employee beverage container in a food preparation/clean dishware area does not have a lid and a straw or equivalent dispensing mechanism to prevent hand contact with lip contact area of drink container.
  • Basic - Equipment and utensils not properly air-dried - wet nesting. Observed wet nesting of the pans on the drying rack.
  • Basic - Fan cover in walk-in cooler has accumulation of dust/debris. **Repeat Violation**
  • Basic - Food not stored at least 6 inches off of the floor. Observed cases of lettuce on a shelf two inches off the floor.
  • High Priority - Dented/rusted cans present. Observed dented cans in the dry storage area corrective action had operator move to to be returned for credit. **Corrected On-Site** **Repeat Violation**
  • High Priority - Dishwasher handled soiled dishes or utensils and then handled clean dishes or utensils without washing hands.
  • High Priority - Employee touched bare body part and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands.
  • High Priority - Thermotape failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Establishment has no approved Alternative Operating Procedure. Observed a waiter prepare toast and touch with is bare hands , corrective action had server throw away toast and do it correctly .
  • High Priority - Potentially hazardous (time/temperature control for safety) food found greater than 47 degrees Fahrenheit but less than 70 degrees Fahrenheit more than six hours. Observed Demi glaze at 51° had been there from the night before. Corrective action had steward bring up to 165°F and cool down to 70°F in two hours And to 41° F, in the next four hours.
