  • Intermediate - Cooking utensils/pots/pans in contact with potentially hazardous food not cleaned at least every four hours. Breaking station equipment only rinsed every time used, not washed and sanitized every 4 hours, Observed procedure, manager rinsed chicken dipping basket and pot at floor mop sink with equipment coming in contact with sink walls and floor tiles, then put back on line in service,. Explained that rinsing could occur only in 3 compartment sink and area must be cleaned befor and after use, in use equipment could be rinsed only but must be thoroughly washed ,rinsed and sanitized and air dried at least once every 4 hours. May under no circumstance wash in mop sink and then put in service without wash rinse and sanitize to protect from cross contamination of mop, floor, chemicals, dumped in floor mop sink.
