  • High Priority - Cut melon/tomatoes not cooled to 41 degrees Fahrenheit within 4 hours of the time cut. Observed 2 containers of sliced tomatoes in 3 door reach in cooler in kitchen area. Employee said they were cut at about 10am and all employees agreed that neither container of tomatoes had been out prior to inspection, that the container that had been out during peak service was disposed of. Observed one container at 47°F and the other at 52°F.
  • High Priority - Cut tomatoes cold held at greater than 41 degrees Fahrenheit. Observed sliced tomatoes in 3 door reach in cooler in 2 separate containers at 47°F and 52°F. Employees stated neither container had been out during peak service that those tomatoes were disposed of and that tomatoes are sliced each morning at about 10am.
