  • High Priority - Cooked potentially hazardous (time/temperature control for safety) food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. Observed 2 pans of cooked rice on back prep table at 91°F and 101°F. Employees in the area stated the rice had finished about 2-3 hours prior. Observed rice placed on sheet pans and moved to walk-in cooler and at end of inspection (3:30) was observed at 48-50°F. **Corrected On-Site**

Observed salmon on back prep table and burgers to be portioned but at time no one was present at table working on the food items. Observed salmon at 56°F and burgers at 50°F at 2:30pm. Observed salmon wrapped and returned to walk-in cooler. Observed burgers unpackaged and portioned and placed in coolers. At end of inspection (3:30pm) the following temperatures were observed: salmon 41°F and burgers between 42-45°F. **Corrected On-Site**

Observed Pico de gallo and diced tomatoes in walk-in cooler prepped from ambient at 11:24 per date stamp. At 2:30 observed diced tomatoes at 44°F and Pico de gallo at 48°F. At 3:30pm, observed diced tomatoes still at 44°F and Pico de gallo at 45°F.

  • Basic - Soiled reach-in cooler gaskets. Observed gaskets soiled with black mildew-like residue and food debris. Observed throughout kitchen service area but especially at reach in coolers around fryer/breading station.
  • High Priority - Cooked meat/poultry cold held at greater than 41 degrees Fahrenheit. Observed chicken in bowl on prep table intended for portioning but observed no one working with chicken. Observed chicken was at 59°F and cook said it had been out of the cooler about 15 minutes or so. Manager moved chicken to thermalizer. **Corrected On-Site**

Observed plastic containers of salsa, made on site,in walk-in cooler. Observed containers stacked 2 high and in close proximity to each other with 4 rows on shelf. Salsa was made at 11:02 and observed at beginning of inspection in walk-in cooler at 62°F. About an hour later, salsa was observed at 63°F.
